4 cups warm whole milk

4 oz Butter (unsalted)

1/4 cup All purpose flour
•
Pinch of Nutmeg
•
Sea salt (to taste)

Black pepper (to taste)
•
Pancetta (cubed for topping)

Handful of Parsley (chopped for topping, optional)
