Italian Lasagna Rolls

2 tablespoons chopped fresh parsley
8 ounces mozzarella cheese shredded, about 2 cups (reserving 1/2 cup for topping)
4 ounces Parmesan cheese finely grated, about 1 1/2 - 2 cups (reserving 1/4 cup for topping)
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup chopped yellow or white onion
2 cloves garlic, finely minced
1 pound lean ground turkey or beef
1 teaspoon salt
1/2 teaspoon black pepper
28-ounce can crushed tomatoes
15-ounce can tomato sauce
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon dried thyme
12 traditional lasagna noodles
