3 lbs stew beef (or chuck roast or short ribs, see note below), cut into chunks
1/2 tsp salt
1/2 tsp black pepper
2 tbsp white rice flour (optional)
2 tbsp ghee
1/2 onion, diced
2 cloves garlic, minced
2 tbsp tomato paste
3/4 cup red wine (Zinfandel, Merlot, Cabernet Sauvignon)
3 cups beef broth
3 carrots, peeled and cut into chunks
3 parsnips, peeled and cut into chunks
3 celery stalks, cut into chunks
1.5 lbs waxy potatoes (red, golden, etc), cut into chunks
3 sprigs fresh thyme (1/2 tsp dried okay)
salt and pepper to taste
1 small handful parsley, chopped
