Indian Vegetable Curry

INGREDIENTS
1 small onion, chopped
4 cloves garlic, roughly chopped
1 jalapeno, seeded and chopped
2 tablespoons water
1 tablespoon canola oil
2 tablespoons sweet curry powder
1 sweet potato, peeled and cut into 1” chunks
2 carrots, peeled and cut into 1” chunks
1 red bell pepper, seeded and cut into 1” chunks
6 ounces (about 2 handfuls) fresh green beans, trimmed and snapped in half
4 scallions (white and green parts), thinly sliced
½ cup unsweetened coconut milk beverage
1 cup low sodium vegetable broth
1 tablespoon cornstarch
2 tablespoons chopped cilantro
1 teaspoon paprika
½ teaspoon salt (optional)
¼ teaspoon ground black pepper
