Indian-Spiced Chicken with Chickpeas and Spinach

INGREDIENTS
1 Tbsp. vegetable oil
3 bone-in/skin-on chicken legs (or 6 thighs/3 breasts)
Salt and pepper
1 Tbsp unsalted butter
1 large onion (thinly sliced)
4 cloves garlic (chopped)
1 Tbsp. grated peeled ginger
2 tsp. coriander
2 tsp. cumin
2 tsp. turmeric
1/4 tsp. cayenne pepper
1 15 oz. can chickpeas (drained and rinsed)
2 cups chicken broth
6-8 cups lightly packed baby spinach
1/4 cup Greek yogurt
1/4 cup fresh cilantro or flat-leafed parsley (roughly chopped)
