For the Pickling Spice:

1/2 tablespoon of whole mustard seed

2-1/2 teaspoons whole allspice
•
1/2 teaspoon of ground coriander seeds
•
1/2 teaspoon of celery seed
•
1/4 teaspoon ground cloves
•
1/2 teaspoon turmeric
•
1/2 teaspoon ground ginger
•
1/2 teaspoon of peppercorns
•
1 large bay leaf, crushed
•
For the Pickles:
•
2-1/2 pounds pickling cucumbers (4 to 6 inch)
•
3 tablespoons pickling salt
•
1 extra large Vidalia onion, thinly sliced (about a pound)
•
Crushed ice
•
1-1/2 cups apple cider vinegar
•
1-3/4 cups granulated sugar
