2 chicken uncooked breasts (or [skip boiling &] use a pre-cooked rotisserie chicken)

1/2 onion, diced [omit if using rotisserie chicken--WG ed.]
•
salt and pepper to taste

1/4 c. thinly chopped carrots (fresh or frozen)
•
1/4 c. fresh or frozen peas
•
1/2 c. chicken broth (use the water that was used to boil the chicken in)
•
1/2 t. chicken bouillon
•
1 can cream of chicken soup
•
1/2 c. milk
•
3/4 c. Bisquick or other pancake mix
•
1/4 c. butter, melted (optional)
