INGREDIENTS
NUTROLL DOUGH
1 2-ounce cake of fresh yeast or two packets of dried active yeast
1 tablespoons sugar, plus 6 tablespoons
1/4 cup cold non-fat, skim milk, plus 1 cup
4 egg yolks
1 cup (2 sticks) unsalted butter, melted and slightly cooled, plus 2 tablespoons of butter reserved
1 teaspoon vanilla
4 1/2 cups flour, plus 1/4 cup set aside
1 teaspoon salt
1/2 cup powdered sugar for rolling out the dough
FILLING
4 egg whites
1 pound ground walnuts
1 tablespoon ground cinnamon
1 cup granulated sugar
1 teaspoon vanilla
