INGREDIENTS

Prep time: 5 minutes, plus 12 hours for soaking the beans
Cook time: 45 minutes
¾ cup (150 g) dried chickpeas, or one 15-oz (425-g) can chickpeas, rinsed and drained
¼ cup (65 ml) extra virgin olive oil, or more as needed
Freshly squeezed juice of 2 lemons
¼ cup (65 ml) water, plus more if needed
5 cloves garlic, peeled
1 teaspoon salt
