3 tablespoons Cajun seasoning (we used Old Bay)
2 tablespoons extra-virgin olive oil
1 (30 oz.) bag frozen shredded hash browns
6 cups low-sodium chicken broth
1 (10. 75 oz.) cream of chicken soup
1 (8 oz.) package cream cheese, room temperature
1 cup sharp cheddar cheese, grated, plus more for garnish
kosher salt and freshly ground pepper, to taste
1/3 cup green onion, optional, garnish
