1 garlic clove, minced

3 TB hoisin sauce
•
2 TB water
•
1 TB dark soy sauce
•
2 tsp rice vinegar, or 1 tablespoon Chinese rice wine or dry sherry

1/4 tsp chile paste, or to taste

1 tsp sugar

1 cup oil for frying beef

2 TB oil for stir-frying
