Preheat The Oven to 400 degrees F. Putting the chicken in at this heat will let the skin brown up nicely before you reduce it to cook the meat through.

Prepare A Properly-Sized Baking Dish to receive the chicken. Place a small rack in the pan to keep the meat lifted above the grease as it cooks.

Pat The Skin Dry And Coat With Olive Oil or softened butter over the entire piece. Do not rinse off your chicken! Introducing too much water interferes with the Maillard Reaction (that nice caramelization of the meat).
