1 cup milk
8 ounces (about 2 1/2 cups) shredded Swiss or cheddar cheese
1 to 2 tablespoons Dijon mustard, or to taste
6 slices rye bread, cut into small cubes (about 4 cups)
1/4 cup Thousand Island or Russian Dressing
3/4 pound cooked corned beef, sliced thin or cut into bite-sized pieces
1/2 pound sauerkraut, rinsed and drained
