Hot Cross Buns

INGREDIENTS
150 millilitres milk
50 grams butter
zest of 1 orange
1 clove
2 cardamom pods
400 grams strong white bread flour
1 x 7 grams packet easy-blend yeast
125 grams mixed dried fruit
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground ginger
1 large egg
1 large egg (beaten with a little milk)
3 tablespoons plain flour
½ tablespoon caster sugar
2 tablespoons water
1 tablespoon caster sugar
1 tablespoon boiling water
