2-3 lbs baby red potatoes

1/2 package of bacon and the drippings
•
4 hard boiled eggs cooled, peeled and chopped
•
1/2 cup apple cider vinegar
•
1/4 red onion diced small and 1/4 red onion sliced
•
1 tbsp sugar
•
2 tbsp cornstarch and 3 tbsp water to make slurry
•
salt and pepper to taste
•
1/2 tsp red pepper flakes
•
1/8 cup chopped fresh parsley
