"Eastern Europeans are fond of wafer tortes such as this Polish Wafer Mazurka using store-bought wafers. I've never cared for those wafers, so I decided to make homemade pizzelles and use them instead. An alternative is to use this Polish wafle recipe on a Scandinavian goro iron, if you can find one. The pizzelle wafers worked like a charm. I would, however, assemble the torte just a few hours before serving because homemade wafers are so delicate. If left with a filling overnight, the wafers will get too soggy. I think the taste is far superior to traditional Eastern European wafer tortes. INGREDIENTS
Wafers:
1 3/4 cups all-purpose flour
2 teaspoons baking powder
3 large eggs
3/4 cup sugar
1/2 cup butter, melted
1 tablespoon vanilla extract (or flavoring of choice like anise)
Filling:
2 cups heavy cream whipped with 1/2 cup confectioners' sugar and 4 tablespoons piping gel to stabilize
Jams of choice
Garnish:
Confectioners' sugar
