"Eastern Europeans are fond of wafer tortes such as this Polish Wafer Mazurka using store-bought wafers. I've never cared for those wafers, so I decided to make homemade pizzelles and use them instead. An alternative is to use this Polish wafle recipe on a Scandinavian goro iron, if you can find one. The pizzelle wafers worked like a charm. I would, however, assemble the torte just a few hours before serving because homemade wafers are so delicate. If left with a filling overnight, the wafers will get too soggy. I think the taste is far superior to traditional Eastern European wafer tortes.
