INGREDIENTS
For the ravioli :
5 large eggs, room temperature (divided)
3 cups all-purpose flour, plus additional for dusting
3 tablespoons warm water
2 tablespoons olive oil
1 teaspoon sea salt
1/2 teaspoon sugar
For the ricotta and spinach filling :
1 cup ricotta cheese, well drained
1/4 cup shredded mozzarella cheese (optional)
1/2 cup fresh baby spinach, chopped
1 teaspoon dried parsley
1 large egg
