2.5 pound chicken thighs, bone-in & skin on
6 cups chicken stock
2 small Vidalia onions (or yellow onion)
4 stalks celery (divided in recipe)
4 carrots (divided in recipe)
2 bay leaves
1½ tsp sea salt (fine grind)
1 tsp pepper (divided in recipe)
1 tsp dried thyme leaves or 2 sprigs fresh thyme (divided in recipe)
6 ounces medium egg noodles
1 Tbsp fresh or dried parsley (optional)
