3-4 cups canola oil (enough to come up 1½ inches in a large pot)
3 cups diced Fuji apples (peeled, cored, and diced into ½” bite-size pieces (Approx 3 large apples or 4 small apples))
2 teaspoons fresh lemon juice
1½ cups all-purpose flour
¼ cup granulated sugar ((50 grams))
2 teaspoons baking powder
½ teaspoon sea salt
¾ teaspoon ground cinnamon
½ teaspoon ground nutmeg
⅓ cup whole milk ((80 ml))
2 large eggs (lightly beaten)
3 tablespoons unsalted butter (melted & cooled (45 grams))
1 teaspoon pure vanilla extract
2 cups confectioners sugar ((240 grams))
¼ to ⅓ cup milk or water
½ teaspoon vanilla extract
¼ teaspoon ground cinnamon (optional)
