Buttermilk pancakes:
· 1 egg
· 1 1/3 cups buttermilk
· 1 cup flour, or 1/2 cup white flour and 1/2 cup whole wheat flour
· 1/2 teaspoon baking soda
· 3/4 teaspoon baking powder
· Dash salt
· 1/2 teaspoon lemon oil or lemon extract
· Vanilla yogurt
Blueberry compote:
· 2 cups light corn syrup
· 2 cups frozen blueberries
· 1/2 teaspoon cinnamon
· Dash kosher salt
· 1/2 teaspoon vanilla extract
