INGREDIENTS
4 cups cooked short grain rice (preferably leftover, cold)
8 tablespoons margarine
2 cloves garlic
2 tablespoons canola or vegetable oil
2 chicken breasts (small cubes (can use steak, shrimp, pork or ham instead if desired))
4 eggs (beaten)
2 cups zucchini (medium dice)
1 cup diced onion
1 cup finely diced carrot
16 ounces sliced cremini mushrooms
4 green onions (thinly sliced)
1/4 cup soy sauce
1 teaspoon sesame oil
1 tablespoon sesame seeds (toasted)
salt and pepper (to taste)
