2 lbs potatoes (about 4 medium) scrubbed and cut into bite sized cubes

¼ cup cooking oil of choice
•
5 tablespoons onion soup mix (equals 1 package Lipton)
•
1½ - 2 teaspoons herbs of choice (I used ½ teaspoon dried thyme and 1 teaspoon chopped fresh rosemary)
