Many myths surround this vegetable. Cabbage eaten before a night on the town is said to cure drunkenness, but enjoy this recipe for what it is: very good.

Ingredients

  • 1 med. head red cabbage, sliced very thinly
  • 2/3 C. boiling water
  • 3 Tbs. butter
  • 1/4 C. red wine vinegar
  • 1/2 tsp. caraway seeds
  • 1/8 tsp. salt
  • 1/6 tsp. pepper
  • 2 tsp. light brown sugar
  • 1/8 tsp. nutmeg

  • Step 1
    Place all ingredients in a large pot and toss to mix. Cover and simmer, stirring once or twice, for 15-20 minutes until cabbage is crisp tender. Serve hot in soup bowls with plenty of the cooking liquid.
