3-4 sprigs fresh thyme

1 tsp good-quality salt (where to buy), to taste

1-2 TB stone-ground mustard (where to buy)

1 TB apple cider vinegar (where to buy)

8 cups chicken or veggie broth (homemade) can also substitute half water, half broth
