1 jar hearts of palm – I usually use 4 long stalks - diced into 1/4 inch pieces (and yes, I get mine at TJ’s)

3 English cucumbers, these are the small (usually 4-5 inch) seedless ones – diced into 1/8 inch pieces
•
5-6 small pieces of cleaned basil – cleaned, rolled up, and cut/sliced
•
5-6 pieces of fresh mint – clean, rolled up, and cut/sliced
•
1 1/2 tbsp fresh chopped red onion
•
1 tbsp – EVOO
•
1 tbsp – rice wine vinegar
•
1 tbsp – fresh lemon juice
•
Salt and pepper
