INGREDIENTS

juice of 1/2 lime

1 tablespoon creamy peanut butter
2 tablespoons low-sodium chicken broth
***For the noodles:***
1 tablespoon vegetable oil
3 chicken breasts, boneless and skinless
2 teaspoons garlic powder
1 teaspoon cayenne
kosher salt, to taste
freshly ground black pepper, to taste
3 cloves garlic, minced
1/4 cup green onions, thinly sliced
1 red bell pepper, chopped
1 large carrot, cut into matchsticks
1 large zucchini, cut into half-moons
12 ounces of lo mein noodles, cooked
cilantro, optional, freshly chopped, for garnish
