Healthy Zucchini Breakfast Cookies

INGREDIENTS
2 cups Quick Cooking Oats (Can be gluten free)
1 cup All Purpose Flour
1 teaspoon Baking Soda
1 teaspoon baking powder
1 mashed banana (Use a ripe or a thawed frozen banana for best flavor.)
1/4 cup coconut oil, melted
1 large egg
1/4 cup Seed or Nut Butter (We use Sunbutter, but any nut or plain peanut butter will do.)
1/2 teaspoon vanilla extract
1 medium Zucchini, shredded (About 1 to 1 1/2 cups of shredded zucchini.)
1/2 cup Raisins
1/3 cup Honey
