1 egg
1/3 cup yellow onion, finely diced 
2 Tbsp fresh basil, roughly chopped
3 garlic cloves, minced
1 tsp dried oregano
1 tsp salt
1 tsp fresh black pepper
1/4 cup fresh parmesan, grated
1/4 cup panko breadcrumbs, gluten-free or regular
2 ounces whole milk mozzarella, cut into 5 circular pieces
2 Tbsp olive oil, or avocado oil
1.5 cups marinara sauce
1 cup fresh arugula
5 whole-wheat or gluten-free buns
