8 oz. soba, rice, or high fiber noodles
3/4 lb. chicken breast, cut into chunks
1 tsp. sesame oil and cooking spray
1/2 cup PB2 ( or Better’n Peanut Butter or reduced fat creamy peanut butter)
1/4 cup soy sauce
1/4 cup warm water
2 tbsp. rice wine vinegar
1 tbsp. fresh ginger, grated
1 garlic clove, minced
1 tbsp. honey or agave
1 tbsp. lime juice
1-2 tbsp. Sriracha or Asian hot sauce
1 red pepper, chopped
1.5 cups broccoli florets, chopped
1-2 celery stalks, chopped
1 cup shredded cabbage
4-6 chopped scallions
1/4 cup cilantro
