Healthy Mexican Chicken Verde Quinoa Casserole Recipe

1 cup ​quinoa (rinsed)
2 cups black beans (canned, drained and rinsed)
2 medium yellow squash (or zucchini, chopped)
8 ounces mushrooms (quartered)
1 (4-ounce) can green chilies (drained)
3/4 cup salsa verde
1 tablespoon chili powder
1 1/2 teaspoons cumin
1/4 teaspoon salt
1/4 teaspoon black pepper
1 1/2 cups chicken broth (low-sodium)
2 cups peppers and onions (frozen)
1 cup jack cheese (grated)
Optional: avocado, hot sauce, cilantro, and green onions for serving
