Healthy Chicken Chow Mein Zoodles

INGREDIENTS
4-5 medium zucchini
1 medium chicken breast, cut into 1" inch chunks
1 tablespoon olive oil
1 each of red and yellow bell pepper, thinly sliced
1-2 cups of a mix of snow peas, bok choy and thinly sliced carrots
1 tablespoons chopped fresh cilantro, for garnish (optional)

For the sauce
2 tablespoons cornstarch (or use arrowroot powder)
1/3 cup low-sodium soy sauce (gluten free tamari or coconut aminos for a paleo version)
2 tablespoons oyster sauce (use gluten free or vegan if necessary)
1 teaspoon honey
1 teaspoon sesame oil
2 cloves garlic, minced
1/2 teaspoon fresh ginger, minced
1-2 tablespoons water, plus more as needed to thin out sauce
