INGREDIENTS
1/2 ounce dried porcini mushrooms
1 tablespoon avocado oil
8 chicken thighs, boneless and skinless (or 4 breasts can be used)
1 small onion, minced
1 carrot, diced
2 stalks celery, diced
3 cloves garlic, minced
1/2 pound cremini mushrooms, sliced
1/2 cup green olives, pitted
1/4- 1/2 teaspoon red pepper flakes
2 tablespoons fresh organic basil
1 tablespoon fresh rosemary
1 tablespoon fresh oregano
1/2 cup chicken stock
1 (28 oz.) can diced tomatoes
Salt and freshly ground pepper, to taste
