INGREDIENTS

For the chicken:

Vegetable oil spray
•
1/2 cup all-purpose flour
•
1/2 cup plain bread crumbs
•
Pinch of garlic powder
•
Pinch of paprika
•
1/2 tsp kosher salt
•
1/2 tsp coarsely ground black pepper
•
2 large eggs, whites only (lightly beaten)
•
1 lb. chicken tenders or 4 boneless, skinless chicken breasts, cut into 1/2--inch strips

Metal or bamboo skewers (if using bamboo, soak in water for 15 minutes first so they don't go up in smoke!)

For the Buffalo sauce:
•
3/4 cup hot sauce
•
5 tbsp light butter or margarine
•
1 tsp minced garlic
•
1-2 cups bottled reduced-fat blue cheese dressing
•
3 celery stalks, cut into 3-inch pieces
