4 large sweet potatoes (try to find normal sized sweet potatoes that are not too curvy)

2 tablespoons dark brown sugar
•
2 tablespoons maple syrup (or 2 more tablespoons dark brown sugar)

2 tablespoons coconut oil, melted (may swap butter)
•
1 teaspoon cinnamon
•
1 teaspoon vanilla extract
•
2 eggs
•
1/4 -1/2 cup light coconut milk
•
2 tablespoons coconut oil (left at room temperature so it is solid)
•
2 tablespoons whole wheat flour
•
1/4 cup dark brown sugar
•
1 cup raw pecans, chopped
•
2 tablespoon unsweetened coconut flakes
•
2 tablespoon oatmeal
•
1 tablespoon whole or ground flax seeds (optional) (I used whole)
•
1/2 cup mini marshmallows (optional)
