INGREDIENTS
4 Mahi Mahi Filets about 6-ounces each
1 tbsp Coconut Oil melted
1 cup Pineapple juice
3 tbsp Soy sauce or tamari
2 tbsp Honey
Juice of 1 Lime
2-inch piece Ginger Root peeled and minced
3 Garlic cloves minced
1/2 tsp Red pepper flakes optional
For the mango-pineapple salsa:
1 Mango peeled and diced
1 cup Cubed Pineapple
1/2 Green Bell Pepper seeds removed and chopped
1/2 Red Bell Pepper seeds removed and chopped
1/2 medium Red Onion peeled and finely chopped
1 Jalapeno Pepper seeded and chopped
1/4 cup Fresh chopped Cilantro
Juice of 1 Lime
Salt to taste
Ground Black Pepper to taste
