Hawaiian Chicken Skewers

INGREDIENTS
1/4 cup low sodium soy sauce
2 oz canned pineapple juice
1/4 cup light coconut milk
2 tablespoons honey
2 garlic cloves, minced (I used thePampered Chef Garlic Smash & Pasteto mince the garlic and it was super easy)
1 tablespoon grated ginger (I used thePampered Chef Ginger Graterto grate the ginger and it worked awesome)
1/2 teaspoon sesame oil
2 scallions, chopped
1 lb fresh pineapple, cut into bite-sized pieces (I usedPampered Chef Fruit & Cheese Cutterto cut them into fun Hawaiian flowers!)
1 1/2 pounds (24 oz) raw boneless, skinless chicken breasts, cut into bite sized chunks
You’ll also need 12” skewers – if using wooden skewers you should soak them in water for about 30 minutes before use
