1 large meaty hambone
3 quarts water
2 whole celery stalks (ribs) with leaves
2 large carrots
1 large onion
4 sprigs fresh parsley
2 bay leaves
1/2 teaspoon whole peppercorns
Dumplings
3 tablespoons vegetable shortening
1-1/2 cups self-rising flour
1/2 cup buttermilk or milk
1/4 cup ham stock
Salt, only if needed, to taste
