INGREDIENTS
Mornay Sauce
2 tbsp unsalted butter
2 tbsp unbleached all-purpose flour
1 cup/240 ml whole milk
1/2 cup/55 g shredded Gruyère cheese
Pinch of ground nutmeg
Pinch of cayenne
Fine sea salt and freshly ground black pepper
Waffle Mix
2 cups/280 g unbleached all-purpose flour
2 tbsp sugar
1 1/2 tbsp cornstarch (optional)
2 1/2 tsp baking powder
1 tsp fine sea salt
2 large eggs
2 cups/480 ml whole milk, at room temperature
6 tbsp/85 g unsalted butter, melted and cooled slightly

3/4 cup/85 g shredded Gruyère cheese
Whole-grain mustard, for serving
