Yield: 6 to 8 servings
2 to 3 tablespoons vegetable oil
2 1/2 pounds chuck roast, trimmed and cut into 1-inch cubes
1 medium onion, chopped (about 1 cup)
2 cloves garlic, minced
4 medium carrots, peeled and sliced on the bias into 1-inch pieces (about 2 cups)
8 ounces frozen pearl onions, thawed (about 1 1/2 cups)
1 can stout beer, such as Guinness (14.5 ounces)
1 teaspoon dried thyme
1 bay leaf
2 tablespoons all-purpose flour
Kosher salt and freshly ground pepper
Serve on buttered egg noodles or Mashed Potatoes, or serve with crusty bred for dipping.
