INGREDIENTS
1 tablespoon olive oil
1/2 cup finely minced onion
2 cloves garlic, finely minced
11/2 tablespoons chili powder
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper
14-ounce can crushed fire-roasted tomatoes
1 cup chicken broth, plus more if needed
Salt and pepper to taste
1 pound ground chuck
1 cup chopped onion
Salt and pepper to taste
7-ounce can diced green chiles
1/3 cup plus 2 tablespoons chopped green onions, divided
8 corn tortillas
Olive oil
2 cups shredded Cheddar and jack cheese, divided
Fresh cilantro
Any toppings you like (shredded lettuce, tomato, salsa, black olives, etc.)
