INGREDIENTS
4 medium zucchini, cut on the bias into 1/2 inch thick slices
olive oil, for grilling
sprinkle of kosher salt & ground black pepper
5 ounces crumbled feta cheese
zest of 1 lemon
juice of 1 lemon
3 tablespoons extra virgin olive oil
2 tablespoons minced fresh mint
