INGREDIENTS
2 lbs. boneless, skinless chicken breasts
2 tbsp extra virgin olive oil
1 tsp ground coriander
1 tsp paprika
1/2 tsp cayenne pepper ((omit if you don't like spicy))
1 tsp curry powder
1 tsp ground cumin
1/4 cup unsweetened, full fat coconut milk ((you can sub plain yogurt here if you are okay with Dairy))
2 tbsp fresh lemon juice ((or the juice of 1 lemon))
1/4 cup extra virgin olive oil
2 tsp dijon mustard
2 tbsp fresh lemon juice
1 tbsp apple cider vinegar
1 tbsp fresh, finely chopped dill
2 cloves garlic, minced
kosher salt, to taste
fresh cracked black pepper, to taste
1 Head butter lettuce leaves ((aka bibb + boston lettuce))
1/2 cup grape tomatoes, halved
1/4 cup thinly sliced red onion ((or 1/2 of small onion))
1/2 cup english cucumber, cut in half lengthwise and sliced thinly
1/4 cup fresh cilantro leaves
