24 ounces new potatoes, (see notes)
•
1 tablespoon salt, for potato water
•
olive oil, to drizzle

Aleppo or black pepper, to taste

4 hard boiled eggs, sliced

1 stalk celery, finely chopped

1 piquillo or roasted red bell pepper, chopped
