INGREDIENTS
1 large cucumber de-seeded
1 cup cherry tomatoes
1 whole red pepper de-seeded
1 whole yellow pepper de-seeded
2 cups baby kale
1 cup kalamata olives
2-3 slices gluten free bread of choice
fresh basil for garnish
1/3 cup garlic olive oil
1 tbsp lemon juice
1 tbsp stone ground mustard
1/2 tsp apple cider vinegar
salt + pepper to taste
