1 tbsp. fresh lemon juice
1 tsp. dried dill or 1 tbsp. chopped fresh dill fronds
2 cloves garlic, smashed and minced into a paste
1/2 small cucumber, peeled, seeded, and minced
Kosher salt and freshly ground black pepper, to taste
FOR THE LAMB:
4 1"-thick lamb loin chops (about 1 lb.)
3 tbsp. extra-virgin olive oil
1 tsp. dried dill or 1 tbsp. chopped fresh dill fronds
6 cloves garlic, smashed
1/2 tsp. crushed red chile flakes
Juice of 1/2 lemon
Kosher salt and freshly ground black pepper, to taste
