INGREDIENTS
Jerk Chicken Ingredients:
8 bone-in, skin-on, chicken thighs
2 scotch bonnet or habanero pepper (wear gloves if possible when handling)
2 jalapeno pepper
2 Serrano peppers
1/2 tbsp. thyme
1 tbsp. black pepper
1 tbsp. paprika
1 tbsp. allspice
2 tbsp. creole seasoning or seasoning salt
2 tbsp. garlic powder
2 tbsp. onion powder
2 tbsp. chili powder
2 tbsp. brown sugar
2 tbsp. chopped fresh ginger
2 tbsp. apple cider vinegar
1 lemon, juiced, zested
1 lime, juiced, zested
Spicy white barbeque sauce (recipe below)
extra virgin olive oil to coat chicken 1 1/2 c. Hellmann's/Best Foods Mayonnaise
1/2 c. apple cider vinegar
1 tbsp. prepared horseradish
1 tbsp. extra virgin olive oil
2 tbsp. brown sugar
2 tbsp. hot sauce
1 tbsp. black pepper
1 tbsp. garlic powder
1 tbsp. onion powder
1 tsp. applewood smoked sea salt
1 lemon, zested, juiced
