INGREDIENTS
8 ears fresh corn (husks on), soaked in cold water 30 minutes
1 Â 1/2 tablespoons canola oil
Salt and freshly ground black pepper to taste
 1/4 cup crème fraiche
2 small limes (zest 1 lime, then juice both limes)
1 tablespoon ancho chile powder
 1/4 cup freshly chopped cilantro leaves
 1/4 cup grated cotija cheese (available at Hispanic or specialty markets)
