4 chunky garlic cloves (peeled and smashed )
1 small shallot (quartered)
2 cups loosely packed parsley leaves ((some thin stems are okay))
1 cup loosely packed cilantro leaves ((some thin stems are okay))
2 tablespoons fresh oregano leaves (or 2 teaspoons dried )
1 teaspoon kosher salt
½ teaspoon red-pepper flakes
½ teaspoon black pepper
1/2 cup red-wine vinegar
½ cup extra-virgin olive oil
2 pounds boneless skinless chicken thighs ( (see notes to use breasts))
