Why This Recipe Works * A homemade mixture that combines dry and fresh herbs with sumac and sesame provides more flavor than a store-bought blend. * Butterflying the chicken before grilling allows you to cook both the breasts and the legs evenly while maximizing crispy skin. * Starting the chicken low and slow over indirect heat and finishing over the hotter side of the grill gives you the juiciest results. Notes: Store-bought pre-mixed za'atar can be used in place of the homemade version. Use 1/4 cup total. If using commercial za'atar, salt content will vary. Adjust according to taste.
