4 Heritage boneless thick pork chops about four pounds

1/4 Cup Brown sugar
1/2 Tablespoon Ground cinnamon
1/2 Tablespoon Black peppercorns
1/2 Tablespoon Candied ginger
5 Cloves
1/2 Large apple
1/2 Yellow onion
3 Cups Ice cubes
2 Cups Apple juice
2 Tablespoons Brown sugar
​2 Tablespoons Smoked paprika
1 Tablespoon Chili powder
1/2 Tablespoon Ground black pepper
1 Tablespoon Garlic powder
1 Tablespoon Onion powder
1/2 Tablespoon Dried thyme
​¾ Cup Spicy brown mustard
​1/4 Cup Rice vinegar
3 Tablespoons Brown sugar
1 Tablespoon Molasses
1/2 Teaspoon Smoked paprika
1/4 Teaspoon Black pepper
